
Cevapi Sausages
Cevapi are Balkan-style grilled minced-meat sausages made from a beef and pork blend, seasoned with onion, garlic, parsley, paprika, and spices, formed into small cylinders and grilled until browned and cooked through.

Place the ground meat in a bowl.

Finely chop the onion and grate the garlic; add to the bowl along with parsley, paprika, baking powder, breadcrumbs, water, vegetable stock cube, salt, and pepper.

Mix well with a hand mixer fitted with dough hooks. Cover and refrigerate for 1-2 hours.

Portion the meat mixture into about 50-55 g (1.7-1.9 oz) portions and form into cylindrical shapes about as thick as a thumb and 7-10 cm (3-4 inches) long. The recipe yields about 18 sausages.

Grill the cevapcici on a hot grill pan or barbecue for about 12-14 minutes, turning occasionally, until browned and cooked through. Check one in the center to ensure doneness and adjust times for subsequent batches.

Serve hot. They can be reheated in the oven at 180°C 180 °C · 356 °F · Gas 4 · Medium heat / 350°F 177 °C · 350 °F · Gas 4 · Medium heat for about 10 minutes or until heated through.
