
Matar Paneer
A fragrant Indian vegetarian curry featuring paneer cubes and peas simmered in a tomato sauce with ginger, cumin, turmeric, coriander, and garam masala. Best served with naan, roti, or rice.
Steps

Heat the oil in a frying pan over high heat until shimmering. Add the paneer and fry until browned on the edges, then turn and brown on each side. Remove and drain on kitchen paper.

Add the ginger, cumin, turmeric, ground coriander, and chilli to the pan and fry everything for 1 minute.

Add the tomatoes, mash with the back of a spoon, and simmer for 5 minutes until fragrant. If too thick, add a splash of water. Season well.

Add the peas and simmer for 2 more minutes.

Stir in the paneer and sprinkle with garam masala. Divide between two bowls, top with coriander leaves, and serve with naan bread, roti, or rice.
