Spicy Thai Prawn Noodles
A quick Thai-inspired seafood noodle dish featuring prawns, chili, ginger, herbs, lime and peanuts, tossed with rice noodles.

Cook the rice noodles according to package instructions; drain and set aside. Heat the sesame oil in a large frying pan, pour in the beaten egg and swirl to form a thin omelette. Cook for 1–2 minutes, flip and cook the other side for about 1 minute, then slice into thin strips.

Add red chilli and ginger to the pan; fry for 1–2 minutes. Add the noodles, prawns and egg. Splash in the soy sauce and stir-fry for 1 minute more. Stir in the chopped coriander and mint, and finish with the lime zest and juice. Sprinkle with peanuts and serve.
