Vegetarian Casserole
A hearty British vegetarian casserole featuring lentils, vegetables, and aromatic herbs in a tomato-based sauce, served with rice, mash, or quinoa.

Steps

Heat the oil in a large, heavy-based pan and cook the onions for 5–10 minutes until softened.

Add the garlic, paprika, cumin, dried thyme, carrots, celery and peppers and cook for 5 minutes.

Add the tomatoes, stock, courgettes and fresh thyme; cook for 20–25 minutes.

Remove the thyme sprigs, stir in the lentils and bring back to a simmer.

Serve with wild and white basmati rice, mash, or quinoa.
