
Easy Spanish Chicken
A quick Spanish-inspired one-pan chicken dish featuring chorizo, peppers, onions, olives, and butter beans, finished with parsley.

Preheat the oven to 200C/180C fan/gas mark 6. Heat olive oil in a large ovenproof frying pan over medium heat and fry the onion, chorizo, red pepper, and yellow pepper with a pinch of salt and pepper for 15 minutes until the vegetables have softened and the chorizo has released its oils. Add the paprika and garlic, and cook for a few more minutes until fragrant.

Stir in the chopped tomatoes, olives and butter beans, then nestle in the chicken thighs and season well. Transfer to the oven and bake for 40 minutes until the chicken skin is crisp and the meat is cooked through and tender. Scatter with parsley and serve.
