Marinate the beef with salt, sesame seed oil, white pepper, egg white, corn starch, and oil.

Stir-fry the beef in oil until golden brown, then set aside. In a wok, add oil with minced ginger and garlic, and stir-fry briefly. Add the vegetables, then the sherry cooking wine and water. Add oyster sauce, hot sauce, and sugar. Return the beef and add soy sauce. Whisk cornstarch with water and slowly pour into the stir-fry until the sauce thickens to the desired consistency.
