    Step 1: Preheat the oven to 200°C 200 °C · 392 °F · Gas 6 · Medium heat (180°C 180 °C · 356 °F · Gas 4 · Medium heat fan / gas mark 6) and line a baking tray with foil. In a bowl, mix the sweet chilli sauce with the orange zest and juice, garlic, Thai red curry paste, and a quarter teaspoon salt. Add the chicken and coat well.

    Step 2: Arrange the drumsticks on the foil, spaced apart. Coat the chicken with any remaining marinade, then roast for 35–40 minutes until tender. Wrap in foil or pack into a food container.
