Vietnamese pork salad

Steps

    The day before: make the dressing by dissolving the sugar in lime juice with a little water, then blend with red chilli and coriander. Stir in sesame oil, fish sauce, soy sauce and sesame seeds, then chill.

    Two hours before serving: heat a griddle pan and preheat the oven to 200C. Brush the pork with oil and sear on all sides, then roast for about 10-12 minutes until cooked. Cool and thinly slice; toss with half the dressing.

    To serve: toss remaining salad ingredients with the dressing, pile on a platter, top with the pork slices and spoon over any juices.
