
Spiced smoky barbecued chicken
A juicy Australian grilled chicken marinated with garlic, lemon, and spices, finished over smoldering herbs for a charred, flavorful finish.

Make the marinade by crushing garlic with a pinch of salt, then mix in the lemon zest and juice, the curry powder, chilli flakes, olive oil, and a generous grind of black pepper to form a paste. This can be done in a mini food processor.

Toss the chicken in the marinade and set aside while you light the barbecue. When the grill is hot, lay the herb sprigs on the grid and place the chicken, skin side up, on top. Close the lid and cook over the smoldering herbs for about 10 minutes until the meat starts to color. Turn the chicken and cook for another 20-30 minutes, turning as needed, until it is slightly charred and cooked through to the bone.
