Squash linguine
A comforting vegetarian Italian main featuring oven-roasted butternut squash and garlic blended into a light sauce with linguine and crispy sage.

Steps

Preheat the oven to 200C/180C fan/gas 6. Place the squash and garlic on a baking tray and drizzle with olive oil.

Roast for 35-40 minutes until soft; season with salt.

Cook the linguine according to package instructions. Drain, reserving some of the cooking water.

Blend the roasted squash with about 400 ml of the cooking water until smooth.

In a frying pan, heat a little oil and fry the sage until crisp; drain on kitchen paper.

Add the pasta to the pan with the squash sauce and warm through.

Scatter with sage and serve.
