Thai curry noodle soup
Thai seafood curry noodle soup with prawns, vegetables, coconut milk, and udon noodles.

Heat the oil in a saucepan over medium heat and cook the curry paste for 1 minute before adding the stir-fry vegetables and prawns. Cook for 3 minutes until the prawns are mostly pink, then add the coconut milk, vegetable stock and noodles.

Bring to the boil, then reduce the heat to a simmer and cook for 5 minutes until the noodles are cooked through and the vegetables are tender but still have a bite. Divide between two bowls and sprinkle over the herbs, chilli and spring onion.
