Steak & Vietnamese Noodle Salad
Beef fillet seared and served over a tangy Vietnamese noodle salad with carrots, Chinese cabbage, herbs, and a lime-fish dressing.

Make the dressing by mixing all dressing ingredients in a bowl with 1 tablespoon water until the sugar dissolves.

Cook the noodles according to package instructions, then rinse in cold water to cool. Drain, then toss with carrot, Chinese cabbage, spring onions and the dressing.

Heat oil in a skillet over high heat. Season the steak and cook to your liking (about 2–3 minutes per side for medium-rare). Rest for 5 minutes, then slice. Arrange the salad and steak slices in bowls and scatter with coriander to serve.
