Garlicky prawns with sherry
A quick Spanish seafood dish of prawns sautéed in olive oil with garlic, finished with dry sherry and a sprinkle of parsley.

Heat the olive oil in a large frying pan. Add the sliced garlic and cook for a few seconds. Then stir in the prawns and cook for a couple of minutes until they start to turn pink.

Pour over the sherry and cook for a few more minutes, just until the prawns are cooked through. Sprinkle with parsley before serving.
