
Home-made Mandazi
A quick Kenyan fried-dough snack (mandazi) made with self-raising flour, sugar, eggs, and milk. Simple to prepare, resting time helps the dough relax for soft, tender results when fried.
Steps

In a bowl, mix self-raising flour and sugar (ground cinnamon can be added if available).

In another bowl, whisk the eggs into the milk.

Make a well in the center of the flour and pour in the milk and egg mixture; mix to form a dough.

Knead the dough for 3-4 minutes until smooth and not sticking to the bowl.

Cover the dough with a damp cloth and let it rest for 15 minutes.

Roll the dough on a lightly floured surface to about 1 cm thickness.

Cut the dough into the desired shapes and set aside ready for frying.

Heat oil in a suitable pot and fry the mandazi pieces until light brown on the first side, then flip to finish cooking.
