
Šúľance with Poppy Seeds
Soft potato-based dumplings finished with ground poppy seeds, powdered sugar, and melted butter; a traditional Slovak dessert.

Prepare the potatoes by boiling them with their skins on until tender, then cool completely and mash finely.

Make the dough by combining mashed potatoes, flour, semolina, and salt; knead until smooth and non-sticky.

Shape the Šúľance by dividing the dough into portions and rolling each into a thin rope about 1.5 cm in diameter; cut into 3 cm pieces and roll between your palms to form small dumplings.

Cook the dumplings by boiling salted water and cooking in batches until they float to the surface (about 2-3 minutes); drain.

Prepare the topping by mixing ground poppy seeds with powdered sugar; melt the butter and keep it ready.

Assemble the dish by drizzling the cooked dumplings with melted butter and tossing them in the poppy seed-sugar mixture until evenly coated.
