Vietnamese Prawn Spiralized Rolls

Fresh Vietnamese-style rice paper rolls filled with prawns, spiralized carrots and courgettes, and herbaceous mint and coriander, served with a tangy lime and fish sauce dipping sauce.

    Prepare the dipping sauce: in a bowl, mix all sauce ingredients with 50 ml water and set aside to dissolve the sugar and let the flavours infuse.

    Soften each rice paper wrapper by dipping in warm water for a few seconds, then lay it flat on a damp clean towel.

    Place a few mint and coriander leaves in the center of the wrapper, then top with two prawns and a small handful of spiralized vegetables (if the spirals are too long, trim them).

    Fold the sides toward the center to encase the filling, then tightly roll. Repeat with the remaining wrappers. Slice the rolls diagonally and serve with the dipping sauce.
