
Sweet and Sour Pork
A classic Chinese dish featuring pork strips in a tangy-sweet tomato-based sauce, finished with a hint of coriander.

Crack the egg into a bowl and separate the egg white from the yolk.

Slice the pork tenderloin into strips.

Prepare the marinade using a pinch of salt, one teaspoon of starch, two teaspoons of light soy sauce, and an egg white.

Marinate the pork strips for about 20 minutes.

Place the remaining starch in a bowl, add some water and vinegar to make a starchy sauce.

Heat cooking oil in a wok to about 190°C 190 °C · 374 °F · Gas 5 · Fuego medio (375°F 191 °C · 375 °F · Gas 5 · Fuego medio).

Fry the marinated pork strips until they turn brown, then remove them to a plate.

Add tomato sauce and white sugar to the wok and heat until the oil and sauce are well combined.

Add some water to the wok and thoroughly heat the sweet and sour sauce before adding the pork strips.

Pour in the starchy sauce and stir-fry until the pork and sauce are evenly coated.
