Spaghetti with Spanish flavours
A quick Spanish-inspired pasta dish featuring chorizo, peppers, and parmesan, tossed with parsley and olive oil.

Bring a pot of water to a boil and salt well. Cut the chorizo into strips and chop parsley and peppers, removing seeds.

Add spaghetti to the boiling water with a good pinch of salt, return to a boil and cook for 3 minutes.

In a large frying pan, heat the olive oil, add the chorizo and peppers with black pepper. Cook for about 1 minute until heated through and the juices redden from the paprika. Scoop about half a mugful of pasta water, drain the pasta, and add to the pan.

Add parsley and parmesan, toss well, moisten with a splash of pasta water, and serve with extra parmesan at the table.
