Lamb and Lemon Souvlaki
A Greek lamb souvlaki marinated with garlic, lemon, and dill, grilled on skewers and served with pita bread.

Pound the garlic with sea salt to form a paste.

Whisk together the olive oil, lemon juice, zest, dill and garlic.

Mix in the lamb and combine well. Cover and marinate for at least 2 hours or overnight in the fridge.

If using bamboo skewers, soak them in cold water.

Thread the meat onto the skewers (soaked bamboo or metal).

Heat the grill to high and cook the skewers for 2-3 minutes on each side, basting with the remaining marinade.

Warm the pita breads briefly and serve with the souvlaki.
