
Lemongrass Beef Stew with Noodles
A fragrant Thai-inspired beef stew featuring lemongrass, ginger, garlic and coriander, finished with rice noodles for a comforting one-pot meal.

Pulse ginger, garlic, lemongrass, coriander leaves and red chilli in a food processor until puréed. Heat the oil in a pan over low heat. Add the purée and cook for 5 minutes. Stir in the beef, soy sauce, five-spice powder, brown sugar and stock. Cover and bring to a boil, then reduce heat and simmer for 1 hour 15 minutes. Remove the lid and cook for a further 15 minutes until the beef is tender.

Just before serving, cook the rice noodles according to package instructions. Drain well, then divide between two bowls and spoon over the beef stew. Garnish with remaining chilli and coriander leaves, and serve with lime wedges for squeezing.
