
Shrimp Chow Fun
Classic Cantonese-style stir-fried rice noodles with shrimp, vegetables, and a savory sesame-soy sauce.

Soak the rice noodles overnight until soft.

Boil the noodles for 10-15 minutes, then rinse with cold water and drain.

Marinate the shrimp: combine shrimp, egg, a pinch of white pepper, sesame seed oil, cornstarch, and oil; mix well.

Stir-fry the shrimp in a wok with 2 tablespoons of oil until golden brown; set aside.

Add the remaining oil to the wok and sauté minced garlic, ginger, and vegetables; add the noodles.

Stir in sherry cooking wine, oyster sauce, sugar, vinegar, sesame oil, white pepper, and soy sauce; return the shrimp to the wok.

To thicken the sauce, whisk cornstarch with water and slowly add to the stir-fry until the desired thickness.
