
Venezuelan Shredded Beef
A Venezuelan-inspired shredded beef dish prepared in a pressure cooker with onions, peppers, and tomato, finished in a flavorful sauce.

Season beef with salt, pepper and minced garlic.

Chop 1 onion into 4 wedges.

Place beef with onion wedges and stock in a pressure cooker.

Pressure cook for 20 minutes.

Release the pressure and open the lid.

Remove the beef and save 2 cups of stock in another container.

Shred the beef with two forks; if not tender, cook for another 10 minutes.

Set the pot to sauté and add olive oil.

When the machine beeps, add the sliced onion, red pepper, and tomatoes; cook until tender.

Return the shredded beef to the pot and mix.

Pour in 1.5 cups of the saved stock, Worcestershire sauce, tomato puree, ketchup and cumin; mix.

If sauce seems dry, add a tad more stock.
