
Recheado Masala Fish
A spicy Indian masala-stuffed fish where a thick tamarind-based paste with ginger, garlic, and warm spices is stuffed into mackerel and shallow-fried to a golden finish.

Soak spices, ginger, garlic, tamarind pulp, and Kashmiri chilies (excluding oil) in vinegar.

Add sugar and salt, then stir in turmeric powder.

Combine well and marinate the fish for 35-40 minutes.

Grind the mixture into a soft paste, thinning with vinegar if needed to achieve a thick paste that will stick to the fish.

Rinse the fish slit from the center and make incisions along the top.

Stuff the paste into the center and incisions, coat the fish completely, and marinate for 30 minutes.

Heat oil in a shallow pan; once hot, shallow-fry the stuffed mackerels.
