
Chilli Prawn Linguine
A quick Italian-inspired linguine with chilli prawns, garlic and tomatoes tossed in a lime dressing, finished with basil and served with salad leaves and warm crusty bread.

Mix the dressing ingredients in a small bowl and season with salt and pepper.

Cook the linguine pasta according to the packet instructions; add the sugar snap peas for the last minute of cooking.

Heat olive oil in a wok or large frying pan; add garlic and red chilli and cook gently for about 30 seconds without browning the garlic.

Add the prawns and cook over high heat, stirring frequently, for about 3 minutes until pink.

Add the cherry tomatoes and cook, stirring, for about 3 minutes until just softened.

Drain the pasta and sugar snaps well, then toss into the prawn mixture with torn basil leaves; season to taste.

Serve with salad leaves drizzled with lime dressing and warm crusty bread.
