Potato Gratin with Chicken
Creamy potato gratin with chicken and bacon, layered with onions, creme fraiche and Parmesan, baked until golden and tender. Serves 4.

Slice potatoes and boil in a pan for about 5-8 minutes until firm but not soft.

Thinly slice onions and place in an oven dish with olive oil and chicken stock; cook until onions are soft.

Drain the potatoes and layer onto the onions in the dish.

Season and spoon over creme fraiche until all is covered but not swimming.

Grate Parmesan over the top.

Finish under the grill until nicely golden.

Serve with chicken and bacon, peas and spinach.
