
Jamaican Curry Chicken Recipe
A Jamaican curry chicken dish with tender chicken simmered in a fragrant curry sauce with potatoes, peppers, and aromatics.

In a large bowl, combine chicken thighs with all-purpose seasoning, 1 tablespoon of curry powder, onion, spring onions, green pepper, garlic, scotch bonnet (if using), and thyme. Mix until the chicken is coated. Marinate, covered, in the refrigerator for at least 1 hour or overnight.

Remove onions, peppers, and garlic from the chicken and set aside.

Heat olive oil in a large heavy-bottom pot over medium heat. Add remaining curry powder and cook for 20-30 seconds. Add onions, green pepper, garlic, thyme, and scotch bonnet to the pot and cook until onions soften, about 3-5 minutes. If necessary, add a tablespoon of water.

Add chicken and 1/4 cup of water to the pot. Cover and simmer over medium-low heat for 30-35 minutes, stirring occasionally.

With about 15 minutes remaining, stir in the potatoes and continue to cook, covered.

Season with salt and pepper to taste. Serve hot.
