Vietnamese-inspired baguette sandwich featuring turkey, chicken liver pâté, pickled slaw, cucumber, mayonnaise, and fresh herbs.

To make the pickled slaw, toss carrots and cabbage in a large bowl. In a small bowl, combine the ginger, rice vinegar, sugar, and a pinch of salt. Pour over the vegetables and toss. Set aside for at least 15 minutes.

Halve the baguettes lengthwise and spread the pâté on the bottom half. Top with the pickled slaw, cucumber and turkey. Mix the mayonnaise with chopped chilli and dollop over the top. Scatter mint leaves and sliced chilli. Close the sandwich and serve.
