A fresh Polish vegetarian salad featuring lettuce, tomatoes, spring onions, red chilli, feta, and pomegranate seeds tossed with a lemon-honey-thyme vinaigrette.

Step 1: In a large bowl, combine the olive oil, lemon juice, honey and thyme leaves. Season well, then add the lettuce, tomatoes, spring onions and chilli, and toss to combine.

Step 2: Scoop out the pomegranate seeds into a bowl and remove any white membranes. Arrange the dressed salad on a platter, then scatter over the pomegranate seeds and feta.
