Steps

    Step 1: Line a sieve over a large bowl with a thick sheet of kitchen paper and spoon the yogurt into the sieve. Cover with another sheet and refrigerate to strain for at least 12 hours.

    Step 2: In a bowl, add the lemon juice, most of the olive oil, and the dried mint; stir to soften and let the flavors soak. Mix in the strained yogurt and discard the liquid.

    Step 3: Halve the cucumber lengthwise and remove the seeds; halve widthwise to make them easier to handle, then grate into the yogurt. Squeeze out as much liquid as possible with clean hands.

    Step 4: Add the grated cucumber, garlic and 0.75 teaspoon flaky salt; mix well. Garnish with a drizzle of extra virgin olive oil and a sprinkle of dried mint.
