Patatas Bravas

Spanish vegetarian dish of crispy potatoes served with a spicy tomato sauce.

    Heat the oil in a pan and fry the onion for about 5 minutes until softened. Add the garlic, chopped tomatoes, tomato puree, paprika, chilli powder, sugar and a pinch of salt; bring to the boil, stirring occasionally. Reduce to a simmer and cook for 10 minutes until pulpy. The sauce can be stored chilled for up to 24 hours.

    Preheat the oven to 200C/180C fan/gas 6. Pat the potatoes dry with kitchen paper, then place in a roasting tin and toss with the olive oil and seasoning. Roast for 40–50 minutes until crisp and golden. Transfer the potatoes to serving dishes and spoon over the tomato sauce. Sprinkle with chopped parsley to serve.
