Cook the rice noodles: Place noodles in a large bowl and cover with boiling water. Add sliced sugar snap peas and let stand for 4 minutes. Drain in a colander, rinse under cold running water to cool, then drain again. Return noodles to the bowl and toss with sesame seed oil.
