
Knafeh
A sweet Saudi Arabian cheese pastry baked until golden, then drenched with a rose-lemon syrup for a glossy finish.

Break the knafeh into rough pieces in a bowl. Add melted butter and yellow food coloring; mix well with your hands. In another bowl, mix milk, cream cheese, sugar, and cornstarch until smooth.

Heat the liquid and boil until thickened, then remove from heat and let cool slightly. Add mozzarella and mix. Line a dish with half of the knafeh, pressing to level. Pour the cheese mixture on top and smooth with a spoon.

Cover with the remaining knafeh. Bake in a preheated oven at 200°C 200 °C · 392 °F · Gas 6 · Fuego medio for about 20–25 minutes, until the top is golden and crunchy.

Boil water and dissolve sugar for 4–5 minutes, or cook until slightly thickened, stirring. Add lemon juice and rose water and mix. Pour the syrup evenly over the hot knafeh as soon as it comes out of the oven. Serve.
