Key Lime Pie
A classic American dessert with a buttery biscuit crust and tangy lime filling, finished with whipped cream. Includes a chilling step for best texture.

Preheat the oven to 160C (fan 140C / gas 3). Whizz Digestive biscuits to crumbs, mix with melted butter, and press into a 22cm loose-based tart tin. Bake for 10 minutes; remove and cool.

In a large bowl, whisk egg yolks for 1 minute; add condensed milk and whisk for 3 minutes; then add lime zest and juice and whisk for 3 minutes more.

Pour filling into the cooled crust and bake for 15 minutes.

Cool, then chill for at least 3 hours or overnight.

When ready to serve, softly whip the cream with icing sugar, dollop or pipe onto the top of the pie, and finish with extra lime zest.
