Fried yeast dough pastries formed into long oval shapes and fried until golden. Serve topped with cinnamon sugar, plain sugar with lemon, or Nutella with toasted almonds for a sweet Canadian treat.

In the bowl of a stand mixer, add warm water, a big pinch of sugar, and yeast. Let sit until frothy.

To the same bowl, add 1/2 cup sugar, warm milk, melted butter, eggs, and salt, and whisk until combined.

Attach a dough hook and add the flour, mixing on low until a smooth but slightly sticky dough forms.

Place dough in a bowl, cover with plastic wrap, and let proof for 1 1/2 hours.

Cut dough into 12 pieces, and roll out into long oval shapes about 1/4 inch thick to resemble a beaver’s tail.

Heat oil in a large, deep pot to 350 degrees. Fry dough pieces for 30 to 45 seconds per side until golden brown.
