Norwegian Krumkake
Crisp, delicate Norwegian Kringkake cookies made from a spiced batter and rolled into a cone while hot.

Whisk the eggs and sugar until the mixture thickens.

Melt the butter and let it cool slightly, then add to the egg-sugar mixture.

Mix in spices (cardamom and nutmeg) and gradually add flour to avoid lumps.

Let the batter rest for at least 30 minutes.

Spoon about one heaping tablespoon of batter onto a hot krumkake iron and bake; if the batter is too thick, add some water.

While still warm, shape the krumkake with a wooden krumkake roller or over a cup; the krumkaker harden quickly, so let them sit on the roller/cup until the next is ready.
