Aubergine Couscous Salad
A Turkish-inspired vegetarian aubergine couscous salad featuring roasted aubergine, fluffy couscous, tomatoes, mint, goat cheese, and lemon.

Preheat the grill to high. Place the aubergine on a baking sheet, brush with olive oil, season, and grill for about 15 minutes, turning and brushing with more oil halfway, until browned and softened.

Meanwhile, put the couscous in a large bowl, pour over the stock, cover and leave for 10 minutes. Mix the cherry tomatoes, mint, goat's cheese, and the remaining oil together. Fluff the couscous with a fork, then stir in the aubergine, tomato mixture, and lemon juice.
