
Fried Calamari
Crispy fried calamari coated in seasoned flour with capers, served with a garlic mayonnaise and lemon wedges.

Prepare the squid by cutting it into rings about 0.5 cm thick. Place the flour in a resealable bag, season well, add capers, and shake to mix. Add the squid to the bag and shake again until the rings are well coated. In a separate bowl, mix the garlic with the mayonnaise and set aside.

Pour oil into a large frying pan so the oil depth is about 7 cm, then heat over medium. Test the oil with a small piece of bread—it should sizzle when it touches the oil.

Shake excess flour from the squid, then fry in batches for about 3 minutes until crisp. Drain on kitchen paper and repeat with remaining squid. Serve immediately with the mayonnaise and lemon wedges.
